#RECIPES: STRAWBERRY COBBLER

Some five years ago, Martha Hall Foose visited Florence, and made the best strawberry cobbler I’ve had to date. Strawberry season came a little early this year. In early May, my patch began producing.  I’m hoping that the plants will continue bearing through the coming weeks so my son, Zach, can make his classic strawberry cobbler for our 4th of July celebration.

STRAWBERRY COBBLER

4 cups fresh strawberries, peeled
½ cup unsalted butter
1 cup all-purpose flour
2 cups sugar
1 T baking powder
Pinch of salt
1 cup milk
1 T lemon juice
Ground cinnamon or nutmeg (optional)

Bring 1 cup sugar, strawberries, and lemon juice to a boil over high heat, stirring constantly.  Remove from heat and add to preferred baking dish.  Combine dry ingredients and remaining sugar in large mixing bowl and cut in butter.  Add milk to make dough and roll out ½ inch thick. Place strips of dough on top of strawberry mixture and bake at 375 degrees for 35 to 45 minutes, until golden brown.

Serve warm with ice cream.

    Technical question: what color is your Large Covered Serving Dish? On Heath’s website, I see “Redwood”- I’m assuming this is the same although it looks different- much more orange.

      Karen,
      Unfortunately Heath doesn’t carry the Red Serving Dish at the moment. It was featured in a past seasonal line, but expect to see it in the Fall/Winter Collection. They do have the Serving Dish in Moonstone or Opaque White (which is what we baked our cobbler in) if you are looking for 4th of July themed colors. Hope this helped! -Erin
